Happy National Farmers Market Week!
Many things have occurred to me in the last few days, especially since attending my high school reunion this past Saturday. One of them being that I never would have imagined my life the way it is right now; living in the country, owning and operating an aquaponics greenhouse, attending farmers markets, having big flower and vegetable gardens, and everything that goes along with these. I didn't even know aquaponics existed back in high school. Never would I have thought that working so hard could be so rewarding! Maybe I couldn't have imagined it, literally, but it couldn't be any better!
At todays market in Shoreview we'll have Jericho, Muir and Coastal Star lettuces, freshly harvested yesterday. Along with these are beautiful bundles of kale and amazing cucumbers, harvested this morning.
There will also be fresh baked lemon poppyseed muffins, rice crispy bars, and dark chocolate M&M/dark chocolate chip cookies. Just because I love to bake!
The farmers markets have been a wonderful outlet for sharing our produce, as well as meeting many wonderful people. I'm thankful for it all!
